Potato and Wild Leeks/Ramps Soup

Potato and Wild Leeks/Ramps Soup

Ingredients:
Wild leeks, cleaned and ready for consumption.
2 or 3 slices bacon
2 cups chopped wild leeks (including leaves)
2-3 cups diced red potatoes
1 1\2 tablespoons flour
2 cups chicken broth
1\2 cup heavy cream
salt and pepper to taste
Preparation
1.
In a large skillet or Dutch oven, fry bacon until crispy and set aside.
2.
Add wild leeks and potatoes to the skillet.  Fry on medium to low heat until ramps are tender
3.
Sprinkle with flour, stiring until flour is absorbed.
4.
Stir in chicken broth and simmer until potatoes are tender.
5.
Stir in the cream and heat thoroughly.
6.
Add salt and pepper to taste.
7.
Top each serving with croutons for that finishing touch.
Serves 2 to 4 -  Recipe is easily doubled
